Breakfast at the Cabin

It's 16 degrees Farenheit outside today. More snow fell in the night. Flyboy is off flying in warmer climates, leaving only me and son #3 home. My son is doing what teen boys do best....SLEEP.
I'm enjoying the quiet morning.
Natures sounds are coming from my kitchen Echo while I chop varies veggies to be used in dishes this week.

The dogs relax at my feet. They already cleared the floor of sweet pepper pieces and the don't care for turnips.
Time for breakfast. I've added Flaxseed, (Doc says I need more Omega 3), ashwagandha powder for wellness and for fun some French herbs.

For my omelet, I begin with a dollop of ghee, my choice of fat, to my cast iron pan. Toss in some turnips and season with my favorite Cajun spices. I add diced tomato,  sweet pepper,  green onions. Pour my whisked eggs on top. Sprinkle with parsley and cheddar cheese. Cover to cook through.

I cut the omelet and serve on top of the grits.

Today, I'm enjoying tea Flyboy brought home from Alaska.

Teen boy is gracing me with his presence and shouts, "I smell food!"

Breakfast in Bed

With so many things still closed due to covid, many are choosing to stay in for Valentine's Day. What belter way to celebrate V-Day than to spend a lazy morning together
sharing breakfast in bed!

Spice up your day with this starter!

  Mexican Fiesta Quiche

  Ingredients:
2 eggs, divided
1 1/3 tablespoons water
1/16 teaspoon garlic powder
3/8 cup yellow corn meal
2/3 teaspoon chili powder
5 ounces canned pinto beans
1 1/3 ounces canned diced mild green chilies, undrained

2 2/3 tablespoons shredded Monterey Jack cheese
salsa, or taco sauce

  Preparations
In medium bowl, beat together 1 of the eggs, the water and garlic powder. Stir in cornmeal until mixture is crumbly. To form crust, press cornmeal mixture onto bottom and up sides of lightly greased 8-x-8-x-2 inch baking dish. Beat together remaining eggs and chili powder until well blended. Stir in remaining ingredients except salsa until well combined. Pour into prepared crust. Bake in preheated 375 degrees F. oven until puffed in center and knife inserted near center comes out clean, about 30 to 40 minutes. Drizzle with salsa. Let stand 5 minutes before serving.

Microwave Instructions: Cook on full power, rotating dish 1/2 turn once or twice, 5 minutes. Continue cooking on 50% power, rotating dish 1/4 turn 2 to 3 times, until puffed in center and knife inserted near center comes out clean, about 8 to 12 minutes. Let stand to complete cooking, about 10 minutes. Makes 2 Servings.

Good Morning, Cast Iron and Kisses

After grabbing the first cup of coffee, start the day right by making breakfast together.

I cook with beloved cast iron pans and tips from Gram. She told me of an easy and simple meal to prepare with your honey.

Begin cooking grits before everything else because slow cooking is better. I like to add smoked salt and half n half  to mine.

Drop a dollop of bacon fat into a warm pan. Add a variety of vegitables. Let cook for a couple of minutes. Season - we use a New Orleans flavor.

Add a precooked meat (or may be served as a side). Whip an egg with half n half then pour onto veggies. Lower temp and cover. Add cheese. When cheese has melted and egg is cooked, cut into pieces and serve ontop of hot grits in a bowl.
While doing food prep with your honey, enjoy sipping coffee, sample the fresh veggies, and maybe nibble on each other.

 Enjoy your morning!

Sweet Failure - #PotatoPancakes

In Jessica Peterson's book Southern Charmer, the hero quickly gains the attention of his neighbor by feeding her breakfast. (Being shirtless while cooking certainly helps.)  Elijah Jackson inspired me to cooks some special breakfasts for my honey. In the book, Eli uses simple ingredients and old fashioned recipes.

Flyboy has certainly enjoyed my recent cooking habits. Especially on Fridays when I don't have to go into the office and our youngest is in school. *wink, wink*

Anyways...I've mastered cheesy grits and any dish made with eggs and fresh veggies. My gram would be proud. I thought I'd venture to a new recipe. Sweet Potato Pancakes.

The picture looks yummy.

I chose a recipe from a favorite cookbook, Taste of Home Ultimate Skillet Cookbook.

Get the cookbook HERE

Shredded apples and sweet potato are added to the flour and egg mixture.

A little weird shaped but still a pretty sight in a well-loved cast iron pan.

I admit it was a a lot of work and I certainly don't have the right technique for making hashbrowns or potato pancakes. They tasted yummy and Flyboy enjoyed them. Even the teenager gobbled down cold leftovers.

The first few...several... ah...most were a bit well done.

Tasty Tuesday - Momma Mary's Morning Oats

Oatmeal is a great way to kick off your day, especially if you're dieting. It gives you a packed punch of fiber and protein to help you feel full, thus reducing bad snacking. I used my grandmother's recipe with some modern touches.

Momma Mary's Morning Oats

1/2 cup dry rolled old fashion oats
1 Tbsp flax seed
1 tsp chia seed
1 tsp light brown sugar
1/4 tsp nutmeg
1 tsp cinnamon
1 cup coconut almond milk

Mix dry ingredients together in a microwave safe bowl. Add milk. Cover and set in fridge overnight.

Next day, heat for 1 min in microwave. Stir. Additional heat in 30 second intervals.

This recipe does not need to sit over night, but it's alot more filling if it does. The time breaks down the grains and creates a creamy flavor. Can be prepared stove top as well.

I like to add dried berries to an overnight soak. My favorite dried cherries come from Traverse City, MI. Check out Cherry Republic. Fresh berries or banana should be added after cooking. Nuts can be added any time.
